Today is the first day of summer, and the first day in a while where I’ve looked outside and not been shocked at seeing a blue sky. My garden has been thriving in all of this rain, and I’ve already got tomatoes on the vine, hot peppers, more arugula than we can eat, and an abundance of herbs. Stay tuned in the coming months as I look for ways to use my bounty.

 

Today, though, I’d like to share a few recipes with you that come from some of my friends.

 

Crystal at Ottawa Valley Moms tells us that this yummy and super-easy Beef & Veggies with Mushroom Sauce over rice recipe is a childhood favorite of hers. To me, it’s the perfect comfort food year-round, and an especially easy supper to prepare on a busy summer weekday. I could see myself making this dish and just keeping it in the fridge for my giant teenagers to re-heat whenever their hunger hits.

Tonight I’m making BBQ beef ribs (that I will smoke for 3 1/2 hours on the grill). The next two recipes would be absolutely perfect accompaniments.

 

Candace at Life in Pleasantville cooked up a real favorite of mine, twice-baked potatoes. What’s great about these, besides the fact that you can make them ahead and freeze, is that once you’ve got the method down pat, you can pretty much adapt and change the ingredients depending on your own taste or what else you’re serving. (PS I know I usually seem like a health nut, but I’m a potato-holic. I want these. Like bad.)

And finally, look at this gorgeous Kasha, Beet & Dill salad from Jo-Anna at A Pretty Life. It’s pretty much got all my faves (color, texture, flavour, nutrition) kasha, beets, dill and feta. And, look at her photography. This dish is part of her project to make mealtime beautiful again, and I think she’s definitely achieving her goal. (Note: my family doesn’t like Kasha, but Jo-Anna notes you could make the salad with Quinoa as well. I think I’ll try it both ways.)
